Protein Coffee Blend Recipe

Mark drinks coffee in the morning and sometimes leaves a little extra in the French Press. I’m trying to switch back to tea, so I’ve been putting the extra coffee in ice cube trays hoping I’d think of a way to use it later.

On an exceptionally hot day last week, I was hankering for an afternoon snack.

I opened up the freezer to see the coffee cubes staring back at me and decided to try whipping something up in my blender.

The result? A totally non-Starbucks-like drink. Just kidding. It’s better than Starbucks, IMO.

Tuesday Tutes and Loot: Protein Coffee Blend

  • 1 c coconut milk*
  • 6-8 coffee ice cubes (approx. 1.5 cups)
  • 1 scoop Tera's Whey Chocolate Protein Powder**
  1. Toss the ingredients in your blender and give it a whirl. You might have to mess with ratios depending on your blender.

Please note that I can’t eat bananas (my GI system is seriously whack). If I could, I would have put a half a frozen banana in this too. If you’re a normal human, you should totally try that and tell me how it is.

*I used coconut milk, but whatever milk you’ve got on hand will do ya.
**You can use whatever protein powder you’ve got on hand — ideally chocolate.

I topped this off with a small scoop of homemade vanilla ice cream, the Pioneer Woman’s easy caramel sauce, and some cacao nibs. Talk about an afternoon treat!

I had a little bit of leftover in my blender, so I dumped it back into the ice cube tray and into the freezer (it’s a perfect ice cube tray in case you’re wondering).

Let me know if you try this! It’s perfect for summer and a great way to use leftover coffee.

I know, some of you don’t ever, ever have leftover coffee 😉
