These banana muffins are so good you might die.

… or I might die from eating these, anyway. Turns out I’m allergic to (or intolerant of?) bananas.

I’ve suspected this for a long time, but these muffins confirmed my suspicions. I used to be able to eat bananas if they were baked into things — no problem — it was raw bananas that sometimes made me sick. I was so sick after eating these that I don’t think I could look another one of these muffins in the eye (if they had eyes, which thankfully, they don’t).

Well, that was a great sales pitch for a muffin if I’ve ever heard one. But seriously, these muffins are SO GOOD.

I had like 5 of them, which is probably why I got so dang sick. I gifted them to Mark when he was down to visit last weekend and he loved them.

But seriously. Banana. Blueberry. Coconut. Chia. Just. Ugh. If you make them, promise you won’t eat them in front of me!

These banana muffins are so good you might die.

  • 2 large bananas (mashed)
  • 1 <a href="http://www.redwoodhill.com/goat-yogurt/blueberry/" target="blank">goat blueberry yogurt</a> (6 oz)
  • 1/3 c dark brown sugar
  • 1/4 c coconut oil (melted — or other cooking oil)
  • 1 chia egg (1 T chia seeds + water — or 1 egg)
  • 1/8 t salt
  • 1 t vanilla
  • 1.5 c flour (I used whole wheat)
  • 1 t baking soda
  • 1/4 t cloves
  • 1/2 t cinnamon
  • 1/4 t nutmeg
  1. Preheat oven to 350°.
  2. Prep a muffin pan.
  3. In a large bowl, mix dry ingredients together.
  4. In a separate bowl, mix your wet ingredients together.
  5. Stir wet ingredients into dry ingredients.
  6. Pour into prepared muffin tin.
  7. Bake at 350° for 15-20 minutes, or until golden brown and no longer doughy.

    Pretty much every time I overeat at things like Bacon Fest, potlucks, the Chocoholic Frolic, etc., I know the gutache’s coming. No food allergies to provoke, though.

    That sucks that you are allergic to bananas! Bananas are probably one of my top favorite fruits. Thanks for sharing the recipe, though!
