Kale Chips 3 Ways (Recipe)

First of all, can I just take a minute to express my excitement that the Blend Retreat 2013 details have officially been announced?

AND  I’m apparently such a loud and obnoxious complainer that the 3 lovely ladies who put this shindig together may have picked the dates based on the fact that I can’t attend the first week of May (you know, so they don’t have to hear about it for the next 6 months — or the rest of their LIVES). THANK. YOU.

And now, back to your regularly scheduled programming. Tuesday Tutes and Loot — now in its 10th week of existence.

Today we’re talking about kale.

Last week’s CSA haul left us with a ginormous bag of kale.

I was ecstatic. I’ve been jonesin’ for kale chips ever since I discovered how delicious they are by buying a $7 bag at our local co-op. But how much more awesome is it that I can make them for practically free (you know, since we paid for our CSA share back in May)?

Kale chips are easily the one of the easiest things I’ve ever made.

You can change up the spices to make interesting flavors, and that’s exactly what I did.

No. Not a 3-way with kale chips. Three different ways to make kale chips.

They may not look tasty, but I promise you that they’re all that and better for you than a bag of potato chips. Crunchier. More flavorful. And definitely greener.

Method gleaned from reading several different recipes. Spice mixes are my own.

Plain Jane Kale Chips

  • 2 large bunches of kale (stems removed, torn into tiny pieces)
  • 1 T paprika
  • 1/2 t crushed red pepper (if you want spicy)
  • 1/2 t salt
  • 1 T olive oil
  1. Preheat the oven to 300° F.
  2. Line 2-3 large baking sheets with parchment paper (for easy cleanup).
  3. Mix spices together in a small bowl.
  4. Toss kale in olive oil in a large bowl.
  5. Add spice mix, and toss to coat.
  6. (You can double the spice mix if necessary for your desired spice coverage.)
  7. Spread the kale onto the baking sheets in one large thin layer.
  8. Bake for 20-30 minutes, or until crisp. If kale turns brown, it’s burning, and that’s gross.

Fajita Spice Kale Chips

  • 2 large bunches of kale (stems removed, torn into tiny pieces)
  • 1 T chili powder
  • 1 t cumin
  • 1/4 t cloves
  • 1/4 t cinnamon
  • 1/4 t cayenne pepper
  • 1/4 t crushed red pepper
  • 1/2 t salt
  • 1 T olive oil
  1. Preheat the oven to 300° F.
  2. Line 2-3 large baking sheets with parchment paper (for easy cleanup).
  3. Mix spices together in a small bowl.
  4. Toss kale in olive oil in a large bowl.
  5. Add spice mix, and toss to coat.
  6. (You can double the spice mix if necessary for your desired spice coverage.)
  7. Spread the kale onto the baking sheets in one large thin layer.
  8. Bake for 20-30 minutes, or until crisp. If kale turns brown, it’s burning, and that’s gross.

Curried Kale Chips

  • 2 large bunches of kale (stems removed, torn into tiny pieces)
  • 1 T curry powder (I used orange)
  • 1/2 t graham masala
  • 1/4 t tumeric
  • 1/2 t cumin
  • 1/2 t salt
  • 1 T olive oil
  1. Preheat the oven to 300° F.
  2. Line 2-3 large baking sheets with parchment paper (for easy cleanup).
  3. Mix spices together in a small bowl.
  4. Toss kale in olive oil in a large bowl.
  5. Add spice mix, and toss to coat.
  6. (You can double the spice mix if necessary for your desired spice coverage.)
  7. Spread the kale onto the baking sheets in one large thin layer.
  8. Bake for 20-30 minutes, or until crisp. If kale turns brown, it’s burning, and that’s gross.

I thought the curried kale was going to be my favorite, but fajita spice won out. I burnt the curried kale, so I’m going to give it another go round next time we get kale.

    Yay for kale chips! I love them….but think I’ve been cooking them at too high a temperature (350). I’m going to try 300 degrees next time. Mine get too brown. Good tip! 🙂

      Yes — I read a bunch of places and most said 350, but I saw Smitten Kitchen said 300°, and she has never steered me wrong.

    I am really hoping that I will be able to get in to the Blend Retreat and have it be my first blogger conference! It looks like so much fun! I love Kale chips but haven’t made them in awhile. You just inspired me to whip up a batch though and I think I get Kale in my Farm to you box on Friday!

    I made Kale chips this summer, too, and I was surprised how much I liked them! I didn’t get a chance to try so many variations, though.

    That Blend Retreat looks fun!

    They all sound good! I actually make my kale chips in my dehydrator, I could never get it write in the oven. My fave flavors are kosher salt/garlic powder/red pepper flakes and the same + tons of nutritional yeast. If I get more kale in my farm share this week I think I will try your fajita spice one! My 4 yo nephew loves to eat kale chips with me!

      ooh I need to use nooch. i have yet to try it, but you’re the 2nd person today that’s said that.

      are they considered raw if they’re in the dehydrator? because I’ve been obsessing over raw kale chips from rhythm superfoods.
