
Very Veggie Fajita Recipe
This week’s Tuesday Tutes and Loot is a recipe for vegetarian fajitas that I feel I’ve successfully copy-catted (yes that’s now a word) from our local Mexican restaurant, La Fuente.
If I could only create a successful copy of their margaritas, I’d be one happy lady.
Very Veggie Fajitas

- 1 lg zucchini squash (sliced)
- 12 oz sliced mushrooms
- 1 c sliced green peppers
- 2 c sliced yellow (orange and/or red peppers)
- 1 c fresh spinach
- 1 medium whole tomato (diced)
- 1 pablano or jalepeño pepper (sliced)
- 2 c onion (diced)
- 4-5 garlic cloves (minced)
- 4-6 T olive oil
- 8 T chili powder
- 1 T nutmeg
- 4 T cumin
- .5 c lime juice
- 1 T cayenne pepper
- 1/2 t crushed red pepper
- Slice all veggies and toss in a LARGE bowl.
- Mix spiced together in a small bow.
- Pour spice mix into veggie bowl and toss to coat.
- Add olive oil and lime juice to veggie mix, and toss to coat.
- Heat a large skillet on medium/high.
- Toss veggies and stir fry until desired done-ness.
- Serve with tortillas, if desired.
- Makes 12-16 servings. Works well as an enchilada filling to freeze.
I mention in the recipe notes that this makes a great enchilada filling.
I mixed some of the leftover fajita filling with shredded cheese, filled some corn tortillas, poured salsa over the top, and baked at 350° for 30 minutes. I froze the enchiladas and we’ve been eating them for dinners and lunches when we don’t have much time.
Another thing I love to do with leftover fajita filling is toss it with scrambled eggs. I LOVE fajita eggs. But mostly, I just love fajita filling plain.
