Pumpkin Chocolate Chip Cookie Recipe
Some things are sacred and you just don’t mess with them, like your grandma’s chocolate chip cookie recipe, right?
Wrong! Your grandma would be proud of you for your creativity, so why not use it with one of her most-loved recipes?
My Aunt Sheila combined my Grandma Himes’ most-loved recipes into a cookbook way back when my grandma passed away. I’m not going to lie: It’s mostly desserts and cookies. There’s 6 pages of frostings in this book. And two pages of entrees. My family loves sugar. And frosting.
Here is my modified version of my grandma’s chocolate chip cookies.
I didn’t set out to healthify my grandma’s cookies. I just had a hankering for chocolate chip cookies, and I don’t keep baking stuff in the house. So I got some chocolate chips, and frankensteined the rest from ingredients I had on hand. I will also say these are just as good, but in a completely different way.
Pumpkin Oat Chocolate Chip Cookies
- 1 c canned pumpkin
- 1/3 c agave
- 1 t vanilla
- 2 eggs (you could try egg whites only, but I haven't tried that yet)
- 1 c gluten-free oat flour (I ground oats into a flour)
- 1 c peanut flour
- 1 t baking soda
- 1/2 t salt
- 2 c dark chocolate chips
- 1/2 c oats
- Optional:
- 1 scoop vanilla protein powder
- Cream pumpkin, agave, and vanilla until light and fluffy.
- Add eggs; beat well.
- Combine flours, baking soda, and salt.
- Gradually beat into the creamed mixture.
- Stir in chocolate chips and oats.
- Drop by teaspoonfuls onto an ungreased cookie sheet.
- Bake at 375° for 10-12 minutes, or until lightly browned.
- Cool slightly; remove from cookie sheet.
- Makes about 6 dozen 2.5″ cookies.
You can sub out whatever flours you like — this is what I had on hand.

Ha! I read your grandma’s recipe and yes- it sounds amazing and I’m sure those cookies are to die for. But, let’s be honest- I’m much more likely to make your healthy version (which also sounds great to me!!)

Side note, I’m pretty sure my grandma’s ccc’s were originally hershey’s … 🙂
