#WIAW: When I’m too cheap to buy groceries.
I had mashed potatoes with roasted onions and garlic for dinner one night to use up the potatoes that were starting to sproat. I had a roasted butternut squash that I’d cut the chunk of mold out of before roasting another night. And I had a lot of bowls of gluten free crisp rice cereal and I finished all of the bread we had in the house (including Mark’s gluten-y bread, which is FINE on my tummy now).
But my favorite random fooding from that last week in December was this smoothie. Since I’m quitting sugar, I won’t be making fruit smoothies any time soon, but this was during the week that I was cutting down on sugar, and it fit into my approximately 20 g a day (or about 3 apples) plan.
I saw that we had a really, really old bag of frozen (read freezer burnt) strawberries, so I figured I’d get rid of it. I also had just picked up a bag of raw cacao nibs to help me along on my quitting sugar experiment, so I thought, why not put them together?
Ingredients
- 1 scoop vanilla bean Plant Fusion protein
- 5 large frozen strawberries
- 3 ice cubes
- 3/4 c almond milk
- 1/4 c raw cacao nibs
Instructions
- Place all ingredients in a blender until well blended.
- Serve immediately.
- Makes 1 serving.
Also, this was happening while I made this smoothie. Barney discovered his uncle Jake’s old favorite spot (Jake was our family’s dachshund that we had when I was growing up).
And yeah, that’s another wool eater blanket that I’m working on … little jerk claimed it as his own before I even had a chance to finish it.
