Balsamic Garlic Encrusted Pork Roast
Thanks to Stephanie, I saw this amazing recipe for Grilled Balsamic Garlic Encrusted Pork Roast from Kitchen Confidante on Pinterest (where else?). It looked super easy, and I was kind of getting sick of chicken. Plus I got this great cast iron skillet from Mark’s older bro for Christmas and we were just itching to use it in the oven.
The recipe is simple: Chop up a lot of garlic (of course we added more than the recipe called for), create a marinade, marinade your meat, sear and bake. For you people counting points, this is 5 points + per 4 oz serving, which is about 1/4 of what’s shown here. Also, pork is a good option because it’s less expensive than beef, more interesting than chicken and a bit healthier than beef as well.
